Pastry
Our croissants are semi-sourdough and long-fermented which is what gives them a rich flavour and shatter-y crispness. We are fairly obsessive about our pastries which means that we don’t pre-make and freeze them because in our opinion, it doesn’t give you optimal texture. Our pastries are laminated with butter and rolled the same morning as you get them which is what makes their layers clearly defined and makes them extra flaky. It also means that they retain their crisp texture for up to a day.
